Act of Love – a Tomme variation

Act of Love is a semi-hard pressed cheese, aged 2 months. It is a variation of la Tomme de Waco, made by washing its rind with a Waco local beer, Act of Faith by Brotherwell Brewery. The beer wash infuses love as well as subtle flavors of butter, caramel and nuts. Along with a Belgian beer or an amber ale, it makes a nice aperitif. It can be awesome on a grilled cheese sandwich (try with a darker bread). Or it can become a tasty dessert along with dark chocolate and some roasted almonds. A cheese with many abilities.

Ingredients:

Raw cow milk, cultures, calf rennet, salt, rind is washed with beer.

Sensory notes

  • Texture: Supple with small eyes. 
  • Color: Pale yellow
  • Rind appearance: pink gray, with hints of oranges. 
  • Aroma: buttery, with hints of field hay. 
  • Flavor: It has a more delicate flavor than its cousin, the Tomme de Waco. It is buttery, with tastes of caramel and peanut, with hints of fruity flavors. 
  • Pairing suggestions: With a few grapes for a fresh balance, or with a piece of black chocolate and a few roasted almond for a nice desert taste. Pairs well with beer, either Belgian style (like Act of Faith with which it is made), or an amber ale.
